Pan-fried Chicken Breast

Who loves to eat? I know I do. Who doesn’t? Who loves to cook? I must admit I don’t always like cooking but when I do, I like for my food to look and taste good. The potatoes used for this dish were a welcoming gift from my landlord. It was very kind of her to give them to me the day we first met. That day she also showed me the garden where she plants them. We briefly spoke near the apartment, using the Google translator app. She spoke in Korean and I in English. We sat beside her red chili pepper collection drying in the open air.

How to make this:

– Marinate the chicken breast overnight in lemon juice with salt and black pepper.

– The next day, when you’re ready to cook, start with the potatoes because they will take the longest to cook. Wash them with the skin still on with dish soap. Carefully scrub away any dirt. Then let them boil on medium to high heat for 45 minutes.

– Next, pour water in a small pot for the pre-packaged powdered soup mix. Once the water is boiling, turn off the heat. Put about two packages of the soup mix in the hot water and stir until the soup thickens. Then cover the the soup bowl and place it aside.

– After, chop onions and bell peppers and sauté them with a thin slice of butter until they become soft. Place them together in a separate bowl.

– Lastly, the chicken! Drizzle extra virgin olive oil in a pan under low heat. Place all five pieces of chicken breast in the pan. When you think it has cooked enough (about 15 minutes) add the oriental dressing and teriyaki sauce. The sauces give the chicken it’s golden color and rich flavor. Let the chicken breasts cook for about 15 – 20 minutes, so the meat absorbs the two sauces. When the sauces begin to stick in the pan, turn off the heat. (Total cooking time for the chicken breast: 30 – 35 minutes)

Sauces & Spices Extra Virgin Olive Oil (purchased at an emart)

– When my potatoes are fully cooked I peel and begin setting my plate with potatoes, chicken, onions, peppers and soup. – You can also chop salad or include other side dishes. Using dressing for the salad is optional. (I added more Oriental Dressing. The flavor is so delicious.)

Total Cooking Time: 50 minutes to 1 hour

FYI: In my kitchen I only have two burners (stove tops), therefore I cannot cook many things at once. I purchase all my ingredients from the local NongHyup supermarket in my town.
